Winemaker's notes
Monastrell Rose Wine Organic vineyard of the family, located at 850 meters above sea level in the Aceniche Valley, very well adapted to our terroir. Clay soil, and day – night temperature difference above 15ºC.
The grape is destemmed and pressed gently, to extract the best must
Natural fermentation from the yeasts present in the skin of the grape during 50 days at 16ºC.
It remains on its fine lees, batonage 4 times a week, for a month until bottled on February 17th,
2022.
Very light filtration. A slight sediment may appear in the bottle.
