Monastrell of old vines. Family plot located more than 800 meters above sea level, in the Aceniche Valley.
SOIL TYPE: Clay-limestone soil, with predominance of clay and abundant boulder.
CLIMATOLOGY: Cold winter, with medium precipitation, some in the form of snow. Spring with mild temperatures and low rainfall. Warm and dry summer, with important thermal oscillations between day and night above 15ºC.
VINTAGE: Selected and in boxes of 15 kg.
It ferments slowly in a natural way, with the yeasts present in the skin of the grape. Scrap work. Discover at 3 weeks.
It remains for 9 months in new barrels of French R. Allier of 400 l. Very light filtration.
